Delicious food ready in no time!

I bet all of us are short on time every now and then, but we still need to eat, right? And then we also want to eat something not just tasty, yet also balanced and wholesome so we get our daily intake of fibres, vitamins and minerals to keep up our energy.


In this blog post I will be sharing some quick and easy one pot meals filled with goodness! The recipes shared are for 2 people and mostly low carb, high protein. Of course, feel free to experiment for your own needs. Do be reminded it is important to eat your veggies, at least 200gr per person a day. Enjoy!


Spicy chicken and veggies stew

A lovely stew which serves you well in summer with the refreshing yoghurt and great for winter to keep you belly warm.

Ingredients:

- 400-500gr veggies, I used zucchini, eggplant, onion, tomato and chick peas

- 150-200gr chicken

- 2-3 table spoons of yoghurt

- 2 cloves of garlic

- 1-2 tea spoons harissa paste, I used the rose pedal version for extra dept in flavour

- bit of lemon juice

- dash of salt and pepper

- olive oil

- optional arugula


How to?

- clean and chop chicken and bake in the oil with some salt and pepper

- clean and chop veggies and add to chicken when the chicken is nice and brown

- add harissa paste to the chicken and veggies

- mix the yoghurt with lemon juice, finely chopped garlic and a tea spoon of harissa paste

- when all is ready serve in a bowl and top with some arugula


Beetroot and lentils salad

Beetroot, bloody beetroot. All jokes aside, beetroot is one of my favourite vegetables, should have it more often.


Ingredients:

- 150-200gr lettuce, I used arugula for a spicy bite

- 150gr lentils, I used pre-cooked

- 50-100gr beetroot, I used pre-cooked

- 2 spring onion

- 10-15 olives

- some pickles, I used Turkish pickles a bit sour and salty

- feta cheese

- 2 table spoon lemon juice

- 2 table spoon olive oil

- salt and pepper

- handful of pecans


How to?

- bake the pecans for a nice crunch and set aside

- make a vinaigrette by mixing lemon juice, olive oil and salt & pepper, set aside

- clean and chop lettuce and add to a plate as base

- add the lentils

- chop olives and spring onions and add to the dish

- chop pickles and add

- chop/crumble feta cheese and add

- finally add the pecans

- finish with the vinaigrette


Ceasar salad impression

Inspired by Ceasar salad, but just as good!

Ingredients:

- 150-200gr lettuce, I used soft leaves lettuce (botersla in NL)

- 100-150gr chicken

- 1 avocado

- 10-15 olives

- 2 eggs

- honey

- mustard

- yoghurt

- salt and pepper


How to?

- mix yoghurt, mustard and honey with a dash of water for a dressing, set aside

- boil eggs to your preference, when ready peel and set aside

- clean and chop lettuce add to a plate as base

- clean and chop chicken, bake in oil with salt and pepper.

- ready? Add to the dish

- clean and chop avocado and add to the dish

- chop olives and add

- add the boiled eggs

- finish with the dressing


Salad with green asparagus and tartare

Another tasty salad. I served with tartare, but feel free to leave out the meat or add other lean meat like beef, chicken or fish.

Ingredients:

- 150-200gr lettuce to your preference

- 200gr green asparagus

- 2 mini cucumbers

- 2 tomatoes

- feta cheese

- 1/2 red/yellow bell pepper

- extra: lean meat like tartare, beef, fish or chicken

- balsamic vinegar

- lemon oil

- optional dash of salt & pepper


How to?

- clean and chop lettuce and add to a plate as base

- chop tomatoes, bell pepper and cucumbers and add to the dish

- clean asparagus, I chopped them into 2 pieces and roasted them, add to the dish

- add feta cheese to the salad

- finally prep your meat and serve aside

- finish the dish with some balsamic vinegar and lemon oil

- add a dash of salt & pepper to the tartare
