
Home made oats and banana cookies! Maybe not the most attractive looking, but these are very tasty and nutricious.
A little but of history...
I would not say it is a true family recipe, but within our family many people are having a day calendar for years and years from Gerardus Klooster Wittem. Each day there is something mentioned on the calendar, could be historic facts, a joke, a riddle, a nice to know, or recipes... One time the recipe of oats and banana cookies were on this calendar and it became an instant hit in our family!
Ingredients:
- 2 ripe bananas
- 100 gram oats
- 30 gram nuts (use your favs, I would say)
- 40 gram cranberries (or other dried fruit to your liking)
- cinnamon
- baking paper
- bowl
- prepare the oven at 180 °C for 20 minutes
How to:
- mash the bananas with a fork in a bowl
- add the oats, nuts and dried fruit, cinnamon and mix together
- add baking paper to your oven plate
- use a spoon or your hands to make small balls of the mixture
- add the balls on the plate and shape them as cookies (mine always still look a bit rustic)
- bake them in the oven, mostly 20 minutes is enough, but just check if they are cooked well.
Note:
These cookies are rather soft, especially when they are just fresh from the oven.
Once cool, they do get a bit tougher, but won't get crispy.
