Time for comfort food

Comfort food is all about dishes that spark nostalgia, warmth, and pure emotional joy! These delightful foods often whisk you away to memories of home, cherished family gatherings, or those special moments. Or simply, they're the wonderfully delicious treats that warm your heart and belly on chilly days!



Recently I received requests to share some of my latest recipes, so here we go! I think I can say that all are quite simple, yet comforting and delicious. Note all recipes are for 2 persons, so just multiply if you need more, or split in half for one.


Oven roasted chicken and potatoes

I love using the oven for many things. It is super easy, because the oven does most work for you! This time I served the chicken and potatoes with some coleslaw, but serve it with any vegetables you like.

Ingredients

  • 250 gram potatoes (I bought pre-cooked)

  • 200 gram chicken thighs

  • 200 gram grated carrot

  • 200 gram grated red cabbage

  • 1 spoon yoghurt

  • 1 spoon mayonaise

  • bit of garlic mayonaise

  • bit of water

  • olive oil

  • grated cheese

  • salt & pepper

  • backing tray & baking paper


How to

  1. pre-heat oven to 200 °C and place some baking paper on a baking tray°C

  2. cut the chicken thighs and toss with a bit of olive oil, salt and pepper

  3. toss the potatoes with some olive oil, salt and pepper

  4. put the chicken and potatoes on the baking tray and roast in the oven for about 25-30 minutes

  5. mix the grated carrot and red cabbage with the yoghurt, mayonaise and some salt and pepper to make a slaw

  6. you can also make some garlic mayonaise separately for the topping. Just grate some garlic and mix with the mayo, or buy ready made in the shop

  7. When the chicken and potatoes are ready, add to a plate/bowl and top with some garlic mayonaise and grated cheese.

  8. Serve with the coleslaw


Arancini salad

Arancini are one of my favourite Italian ingredients. Often just eaten as a snack, but they are also great for adding to a simple salad. I'd say just make a salad how you like, but below an example just in case. Here I have to be honest, even though there are recipes to make arancini yourself, I have some store bought to make my life easier.

Ingredients

  • 1 box of arancini (usually about 8-10 pieces)

  • 400 gram mixed lettuce

  • some tomatoes

  • some cucumber

  • some gherkins

  • some radish

  • 1 burrata

  • lemon oil

  • balsamic vinegar


How to

  1. pre-heat oven as instructed on the arancini package and prepare accordingly

  2. clean and cut the veggies and mix together

  3. when the arancini are ready serve them with the salad and burrata

  4. sprinkle the dish with some lemon oil and balsamic vinegar


Pasta with spinach and chicken meatballs

I don't often make meatballs, although I really like them and home made is the best. Here I served them with pasta and spinach, but the meatballs are also great with tomato sauce. And I don't use a huge amount of pasta and it is wholegrain pasta with more fibers, I need to pay attention to my carb intake.

Ingredients

  • 60 gram pasta (penne)

  • 175 gram chicken mince

  • some breadcrumbs

  • a bit of milk

  • salt and pepper

  • olive oil

  • flour

  • pecorino cheese

  • 1 onion

  • 600 gram spinach

  • some cooking cream


How to

  1. mix the mince with the breadcrumbs, milk, salt, pepper and some grated pecorino

  2. make medium/small meatballs out of the mixture

  3. roll the meatball in some flour to keep them more firm

  4. cook the pasta according to the package

  5. clean and cut the onion and bake in olive oil

  6. add the meatballs when the onion is nice and brown

  7. add the spinach as soon as the meatballs look well baked and have a ncie brown colour

  8. once the spinach is cooked a bit ass some cooking cream

  9. final touch, add the pasta to the meatballs and spinach and toss

enjoy!


Mushroom risotto

Lovely heart and belly warming dish for the winter months. Risotto is a bit of work, but it is definitely worth cooking and eating! In this recipe I used risotto that was already mixed with some dried herbs and truffle. Often people also add some cooking cream, but I just stick with stock.

Ingredients

  • 1/3 cup of risotto rice

  • 400 gram mushrooms

  • 100 gram pancetta

  • 1 onion

  • garlic

  • olive oil

  • pecorino cheese

  • 1/2 stock cube

  • 1 liter of hot water


How to

  1. clean and cut the onion and garlic

  2. mix the stock cube with the hot water

  3. bake the onion, garlic and pancetta till nice and brown

  4. clean and cut the mushrooms and add to the pan

  5. once the mushrooms are ready (not soggy and brown) add the rice and toss

  6. add some stock and stir till evaporated and dot his until the rice is cooked

  7. serve the risotto with some grated pecorino cheese


Peppery beef with mushrooms and potatoes

I try to balance my diet with meat and vegetarian and sometimes vegan dishes, but I do like a nice steak every once in a while. Steak combines with baked mushrooms are really one of my all time favourite combinations. To me these work really well together.

Ingredients

  • 2 pieces of steak

  • 400 gram mushrooms

  • 250 gram potatoes, I used roseval in this recipe

  • olive oil

  • salt and pepper

  • thyme


How to

  1. take the steak out of the fridge to get it to room temperature

  2. clean and cut the mushrooms

  3. toss the potatoes in some olive oil, salt, pepper and thyme

  4. bake the potatoes till brown and soft

  5. add mushrooms to the potatoes and bake until they are not soggy anymore and brown

  6. put some oil around the steak and bake in a hot pan until a good brown colour, even a bit crispy and the inside medium; at leats that's how I like my steak.

  7. serve the steak topped with a nice dash of pepper with the potatoes and mushrooms
