When granola came into my life...


Been making a new batch of granola. Actually got inspired when we still had a Barista at work. The Barista Lady also used to sell many other goodies like yoghurt with granola and at one point I thought, I can do this myself!


Of course, the nice thing about making these things yourself is that you can make it to your own liking and taste. Besides, it is sooo easy; the oven does most of the work!


Lately, granola became more and more popular and it is said that granola has many health benefits. Like balanced amount fo calories, fiber and micro nutrients. Granola is a mix of oats, nuts and honey and may also include dried fruits, seeds, spices, nut butter and other grains. With additional ingredients, the granola may get extra vitamins, iron, magnesium and more. This so-called health benefit can come from every ingredient used. However, using the wrong ones or quantity could also have downsides, particularly due to added sugar and fats.


Even more reason to make this yourself, rather than buying it, because then you know exactly what is in it and what not and how much. Besides, when you know from yourself you need more of a certain vitamin or mineral, you can add ingredients that fit your personal needs.


When well-balanced, granola can be a good fiber and protein combo and especially when being careful with the use of sugar and fat, you can enjoy 😊 it to the fullest and have a good start of the day!


Ingredients:

- 1 full cup of oats

- 100 gr almonds

- 100 gr pecans

- 50-60 gr mixed seeds (pumpkin, sunflower, pine nuts)

- 1 teaspoon vanilla or almond extract

- 1 teaspoon cinnamon (or speculaaskruiden)

- tad bit of olive oil

- 2 tablespoon of honey

- large bowl for mixing

- baking paper

- lots of love 💕


How to:

- add the dry ingredients to the bowl and mix

- add the vanilla or almond extract and mix

- add the oil and mix

- add the honey and mix

- baking paper on the oven tray and add the mix to the tray

- bake in a pre-heated oven at 160°C for 30 minutes


Of course, when the granola is ready, you can add lots of other great ingredients such as dried fruit, other nuts, or what I also love to add as a delicious extra is cocoa nibs and/or coconut flakes.
